New Louisville concept leverages old disco ball factory space

Paseo opened this week and will anchor a new hotel, called Myriad, in a walkable, bustling neighborhood in Louisville, Ky.

A new restaurant focused on wood-fired cooking and Mediterranean and Middle Eastern-inspired dishes opened this week in the Highlands neighborhood of Louisville, Kentucky.

Paseo’s menu is inspired by Executive Chef Jeremy Frederiksen and includes appetizers such as crispy ricotta balls, chorizo octopus and hummus brulee; entrees like wood-fired berbere golden halibut, wagyu beef loin, harissa cauliflower steak and grilled lamb burger and wedges; and paella, homemade pasta, sides, and a robust cocktail menu.

The restaurant, which sits adjacent to a pool and features a partially covered, open-air courtyard, anchors a new boutique hotel, called the Myriad, set to open later this summer. The space used to serve as a disco ball factory, and some features from those days remain, including a large structure outdoors that used to vacuum dust from the factory. The structure has since been repurposed and painted orange, to complement the concept’s modern, chic design.

Paseo is open 4:30 to 9:30 p.m. Tuesday through Thursday and 4:30 to 10:30 p.m. Friday and Saturday. Starting in August, it will open daily for dinner and lunch service from 11 a.m. to 2 p.m. Monday through Friday and brunch from 9 a.m. to 2 p.m. Saturday and Sunday
