INGREDIENTS:1 small red onion, sliced into ¼ inch rounds
6 Tbsps. sherry vinegar
1 tsp. dried oregano, preferably Mexican
1 tsp. salt

Roasted Poblano Rajas
2 lbs. fresh poblano chiles
2 Tbsps. vegetable or olive oil
2 large white onions, sliced ¼ inch thick
2 tsps. fresh thyme, chopped (optional)
8 sprigs fresh thyme, for garnish (optional)
1 ½ cups smoked beef, coarsely shredded
32 small lettuce leaves, for lining plates
