Not only are gas appliances historically more cost efficient than electric appliances, but they’re easier to operate, especially for the line cook who wants to fire up his burner and quickly turn up the heat. But given the growth in popularity of energy efficient and green-friendly equipment, mixed fuel kitchens are not as uncommon as they once were.
