Launch marks vegan eatery’s foray into casual dining
In 2012, chef Guy Vaknin and his wife Tali set out to develop a 100-percent plant-based concept with Beyond Sushi — their modern, health-conscious approach to traditional sushi — in New York City. Since then, the vegan restaurant has expanded to three grab-and-go locations, and will open its first dine-in unit on May 10.
