Barley Corn Salad

INGREDIENTS:6 cups fully cooked organic barley
2 cups organic yellow corn kernels
3 Tbsps.pickled ginger, julienned
½ cup organic green onions, julienned
½ cup roasted red pepper, diced
1/3 cup Ume plum Japanese vinegar
¼ cup tamari
1 tsp. sesame oil
1 Tbsp. toasted sesame seeds
1 Tbsp. black sesame seeds
Kosher salt and freshly ground black pepperDIRECTIONS:1. Combine all ingredients in a large mixing bowl. Taste and season with salt and pepper. Cover and allow to chill in refrigerator for at least one hour.
