New on the menu: Bison meatballs and a lamb T-bone

Plus a Louvre-inspired cocktail, truffled chicken and rotisserie cauliflower

There are reports of consumers spending less and trading down as inflation continues and recession looms, but there’s always demand for luxury and the new dishes on menus this week are targeting the high-end crowd.

Local bison is the highlight of the $37 meatballs at Terra at the Four Seasons Resort Rancho Encantado in Santa Fe, N.M., where executive chef José Fernandez makes meatballs inspired by his Catalan roots and local green chile.

In Philadelphia at Amina Restaurant & Lounge, chef and partner Darryl Harmon draws inspiration from the tall-food days of the turn of the century for his $40 Lamb T-bone tower, served with succotash and a hibiscus gastrique.

Vanderpump à Paris, at the Paris Las Vegas hotel, features a $24 cocktail in a smoke-filled pyramid, and at Noir in New York City, executive chef John Dewine offers a fairly classic presentation of chicken with truffles for $45, although the soy in the demiglace is a reminder of the restaurant’s Asian inspiration.

Even the rotisserie cauliflower at Little Blue Door in Los Altos, Calif., fetches a price of $18.
