Restaurant: Orchard Beer Garden, Stanhope, NJ

Inspiration: “The love of cured meats and summer.”

Key Ingredients: Prosciutto, cappicola, pancetta, house made mozzarella, fried tomato, baby arugula, balsamic reduction, basil mayo, Maldon salt and a garlic roll

Price: $9

Food Cost: $2.95

What the Judges Said: The Summer Cure features a terrific holy trinity of cured meats, and they alone would make most happy. But the addition of a fried tomato is a nice surprise. But the sandwich goes to another level entirely with the creamy mozzarella and the basil mayo. What a delightful, sloppy mess. Waiter, another napkin please!
