7 new restaurant concepts in Colorado and Nevada

Asian fusion in Denver, green chilies get the spotlight in Pueblo, and an Italian red-sauce joint in Las Vegas

Over the last month Denver and its surrounding suburbs have blown up with new places to eat this spring. A husband-and-wife team pays homage to Mom with an Asian-fusion spot featuring ramen paired with sake, a bar showcasing Pueblo green chile tells the story of the region’s history, and an award-winning chef has launched an old-school red-sauce joint with top-quality local ingredients. 

But wait, there's also an Asian-fusion bakery that pairs classic French techniques with Vietnamese flavors, and a barbecue spot opening its fourth location, as well as an ice cream shop. 

In Nevada, the Las Vegas strip is ever changing. There's a new restaurant by a celebrated Japanese chef opened in partnership with 50 Eggs Hospitality Group in The Venetian. Off-strip, an Italian-America eatery and steakhouse by a Jean-Georges alumni that tips a hat to the 1960s, both in menu and design.
