Clams and Ginger with Wilted Greens

Yield: 6 servings.

51-oz. can Sea Watch Gourmet Chopped Sea Clams

2 cups Sea Clam Juice, additional

1 Tbsp. garlic, chopped

1 Tbsp. ginger, grated

1 Tbsp. red chili paste

1 cup carrot, thinly sliced into sticks

½ cup radishes, thinly sliced

½ cup scallions, sliced

6 cups spring mix greens

Put clams with juice, additional clam juice, garlic, ginger, chili paste and carrot sticks in a saucepan. Simmer over medium heat for 15 minutes. Place one cup of greens in the center of a large shallow bowl. Using a 4-oz. ladle, dip out about 3-4 oz. clam meat from the pan and place over the greens. Ladle 6-8 oz. juice only over the bowl. Garnish with scallions and radish slices.
