Yield: 4 fritters.
2/3 cup rice
as needed, vegetable oil
6 oz. Chicken of the Sea® Chunk Light Tuna in Spring Water
1/4 cup milk
2 eggs, separated
2 Tbsp. all-purpose flour
1/8 tsp. pepper
Cook rice according to package directions. Preheat oil in deep fryer or skillet to 375°F degrees. In medium bowl, combine tuna, milk, egg yolks, flour and pepper. Stir into rice, mixing well. In small bowl, beat egg whites until stiff; fold into mixture. Drop by heaping tablespoon into oil and fry until brown. Drain on absorbent paper towels.
