Fresh Pear and Feta Torte

as needed, butter for greasing pan

as needed, bread crumbs for dusting pan

4 fresh pears, cored and thinly sliced

2 large eggs

¼ cup of milk

1 cup sugar

pinch of salt

1½ cups flour

as needed, butter for dotting top of tart

as needed, sprinkle of cinnamon

6 oz. Odyssey Plain Feta cheese crumbles

Preheat oven to 375°F. Generously butter 9" cake pan; dust with dry bread crumbs to coat sides of pan. In small bowl, add eggs; beat well. Add milk, sugar and salt; whisk until blended. Add flour and stir until blended. Spread batter into prepared pan. Layer pear slices on top. Dot with pieces of butter. Sprinkle with cinnamon. Bake for 40 minutes and then sprinkle the top with feta. Bake an additional 10 minutes or until the top is nicely browned. Let cool for 15 minutes before cutting. Slice and serve warm with vanilla ice cream or a dollop of mascarpone cheese.
