Baked Cheese with Fresh Pear Compote

FRESH PEAR COMPOTE:

2 fresh pears, cored, peeled, cut into bite-sized pieces

¼ cup golden raisins

½ cup white wine

½ cup sugar

1 cinnamon stick

2 tsp. orange rind

1 cup apple juice

BAKED LES FRÈRES:

1 Tbsp. soft butter

1 12-oz. piece Crave Brothers Farmstead Classics Les Frères Cheese

1 17.5-oz. package puff pastry sheets

4 Tbsp. butter, melted

For Fresh Pear Compote: In medium sauce pan, add all ingredients; bring to a boil. Reduce heat and simmer, covered, for 15 minutes. Remove cinnamon stick; cool compote.

For Baked Cheese: Preheat oven to 350°F. Lightly grease 9" pie pan with butter. On work surface, lay puff pastry out. Place Les Frères cheese on puff pastry and bundle pastry around cheese. Place in pan, seam-side down. Brush pastry with butter. Bake 15-20 minutes until pastry is golden. Top with fresh pear compote. Serve immediately.
