1½ ounces Arroyo vodka
½ fresh squeezed lime
1 piece of pressed fresh prickly pear from the restaurant’s rooftop garden
as needed, ginger beer

Add a fresh skinned piece of prickly pear into a highball glass. Press the prickly pear slightly to release a small amount of juice without muddling. Add vodka and lime over ice. Top with ginger beer. Stir ingredients just enough to mix thoroughly.
