Sam Fox’s debut hotel unveils its food & beverage lineup

The Global Ambassador in Phoenix details the five restaurants, and a members-only club, that will be inside Fox’s first hotel

Sam Fox’s debut hotel, The Global Ambassador, in Phoenix has released its food and beverage lineup, parent company Author & Edit Hospitality announced on Tuesday.

The Phoenix hotel is Fox’s first foray into the hotel space. The Global Ambassador is 10 years in the making and, after Fox’s 25 years in the restaurant business and over 140 concepts, he plans to own, operate and manage the property.

“As the hotel name implies, the restaurants are an expression of all these spectacular places. We’re now several months away from opening our doors and I’m excited to showcase what has been almost a decade in the making,” said Fox in a statement. “These five restaurants are gathering places, not only for travelers and hotel guests, but for locals who have been instrumental in our success.”

The five restaurants — and members-only lounge — Fox is unveiling include:

Le Âme, a Parisian steakhouse that pays homage to traditional French fare with a steakhouse touch. The menu has a wide variety of classic French dishes like Steak Frites Au Poivre and French Onion Soup along with a new take on dishes like Tuna Carpaccio and Brick-Pressed Chicken Coq Au Vin.

Le Market, a personal ode to the pleasure of les deux amours —the two loves — because “everything is better in the company of another,” according to the company. The restaurant will serve everything from pastries and espresso in the morning to cheese presentations curated by the in-house fromager paired with natural wines in the evening.

Pink Dolphin, where Mexican and Peruvian-inspired dishes and drinks pair with the whimsical and vibrant poolside setting. There will be a variety of Peruvian seafood options like shrimp, white fish and scallops, plus the Cancha, shallow-fried corn seasoned with lime and salt.

Lobby Bar serves a mixture of classic and craft cocktails with a European flair. Cocktails can be complemented with something from the all-day snack menu, such as Lobster Croquettes and House-made Potato Chips with French Onion Dip, with the addition of Osetra Caviar.

Théa Mediterranean Rooftop is inspired by the sun-soaked Mediterranean region. In the shadow of Arizona’s famed Camelback Mountain, Theà, which translates to goddess of light, serves as a haven where guests experience simple pleasures. Visitors will be surrounded by the views and lively DJ energy as Théa comes to life. The menu explores the vast preparations of mezze, pasta and coastal seafood with dips, flatbreads, vegetables and marinated protein skewers, all designed to be shared. Théa’s cocktail program is equally as rooted in fresh and house-made ingredients that combine the classic with the unexpected. But the cocktails are not to be outdone by one of the country’s most extensive rosé collections.

Plus, Arizona’s first-of-its-kind, members-only lounge will open at the hotel, according to the company.

Sam Fox, who sold his company, Fox Restaurants Concepts, to The Cheesecake Factory 2019, is taking a step further down the hospitality path with this venture.

The 12-time James Beard nominated restaurateur remains the CEO of Fox Restaurant Concepts despite it being under The Cheesecake Factory’s domain.

Fox opened the Twelve Thirty club in Nashville in 2021 alongside Justin Timberlake.
