“As a first generation Filipino, born and raised in America, I grew up with two definitions of breakfast, lunch and dinner. In celebration of this bicultural disposition, we introduce both heritages to each other in a dish that incites a conversation of comfort,” says Justin Foronda, chef and owner of Benaddictz, a pop-up brunch in Los Angeles. “The Ube Stuffed French Toast Roll is a play on one of my favorite Filipino desserts, Butsi, and it’s visually reminiscent of ube rolls you'll find in Filipino bakeries. A flash fry captures the light crispness of the original pastry, while respecting the souffle-like center of French toast.
