This recipe was the grand prize winner in the alcohol-free category of the Dole Raises the Bar beverage competition. Yield: 1 serving.
½ cup Dole® Fresh Frozen Banana Slices, partially thawed
1 can (6 oz.) Dole Pineapple Juice
⅔ cup plain yogurt
3 Tbsp. cream of coconut
1 Tbsp. dry pistachio pudding mix
4 ice cubes
Place banana, juice and yogurt into blender container; cover. Blend until smooth. Add cream of coconut, pudding mix and ice cubes into blender. Pulsate with blender until mixed in well. Pour into a chilled glass. Refrigerate for 10 minutes.
