Bite-You-Back Chipotle Bacon Burger

Yield: 12 servings.

3 lb. beef, freshly ground chuck
1½ lb. bacon, cooked crisp, chopped, with drippings
12 oz. red onion, chopped
6 oz. chipotle pepper sauce
24 cloves garlic, fresh, peeled and chopped
6 oz. croutons, seasoned, crushed or chopped to crumbs
12 hamburger rolls, toasted
12 oz. lettuce, shredded
12 slices tomato
12 slices onion
3 lb. steak fries
12 kosher pickle spears

Preheat broiler. Mix first 6 ingredients together by hand in large mixing bowl, just until well-combined and thoroughly blended. Shape mixture into 12 equally large burger patties of about ½ lb. each.

Place burgers onto broiler pan and broil to desired doneness, turing only once (about 4 to 5 minutes per side for medium doneness).

Serve each burger warm on a toasted roll with lettuce, tomato and onion, alongside 4 oz. steak fries and a big kosher pickle spear.
