New on the menu: Pepperoni pizza waffle cakes and duck profiteroles

Plus Japanese pork belly, Peruvian scallops, and Hawaiian tomatoes

Wheel cakes are a sort of stuffed waffle treat in Taiwan, normally stuffed with things enjoyed on that island like sweetened red beans and taro, but at Money Cake, which recently opened at the

Tangram Food Hall in the largely Chinese neighborhood of Flushing in the New York City borough of Queens, they decided to speak to other palates as well, and so are stuffing them with things like pepperoni pizza toppings and chicken with pesto.

A favorite French sweet, profiteroles, or choux pastry filled with ice cream, get a savory treatment at La Serre in Chicago’s Fulton Market, where they’re stuffed with braised duck and topped with foie gras.

In Midtown Manhattan, pork belly gets a Japanese treatment at Class on 38th, where its braised and served over mushroom rice porridge.

Scallops get a Peruvian treatment at the Bayshore Club in Miami, where they’re sliced thinly, made into a sort of ceviche, and served in their own shells.

And in Honolulu, at Arden Waikiki, local tomatoes, burrata, and sweet onions are dressed with pickled powdered plums for a distinctive appetizer.
