A new menu item at Roux, a New Orleans-inspired restaurant in Tampa, Fla., is duck brined in Bayou Rum, a Louisiana spirit distilled from sugarcane, as well as tarragon and juniper berries, and infused with a housemade blend of Sichuan spices including coriander and star anise. The entrée is served along with braised seasonal greens, sweet potato purée seasoned with curry powder and a ginger spiced apple gastrique.

Dez, a Middle Eastern fast-casual concept in New York City founded by chef Eden Grinshpan and By Chloe co-founder Samantha Wasser, is serving its own variation of avocado toast — the Avocado Pita, with Persian cucumber, radish, red onion, lemon vinaigrette, tahini, amba (a pickled mango condiment popular in the Middle East), skhug and basil. Customers can opt to add a fried egg or crispy eggplant to the flatbread sandwich for an additional cost.

Los Angeles-based 800 Degrees Woodfired Kitchen, with five locations in California, recently opened its first store in New York City. Along with its debut on Sept. 7, the restaurant began serving a new signature pizza as an homage to its Manhattan surroundings. The pie is made with locally-sourced smoked salmon pastrami, crème fraîche, red onions, capers, dill and rye kernels on an everything bagel crust. This menu item is exclusive to the New York City location.

Lettuce Entertain You Enterprises is branching out with its first-ever wine bar — Bar Ramone. The new Chicago spot offers an extensive wine list and a menu of small plates with Spanish influences. One dish is a duck confit poutine with crispy potatoes, Mahón cheese (a Spanish cow’s milk cheese) and a fried egg.

Acacia House, a Saint Helena, Calif., restaurant from chef Chris Cosentino, recently introduced new brunch and dinner menus highlighting late summer produce. On the latter, one of the starters is Cosentino’s take on a peach Melba with savory foie gras. In the dish, foie gras torchon is served with peaches, raspberries and madeleines.
