Pollo Tico
Boulder, Colo., just got chef Byron Gomez's Costa Rican chicken shack, which opened on November 2. Pollo Tico is the latest stall to open up in Avanti F&B, a second location of Denver's popular food hall. Gomez, who has worked at many top rated restaurants in New York City, including Café Boulud, Atera, and Eleven Madison Park, is bringing his native culinary traditions to the Denver metro area, focused on the signature protein, chicken.
Pollo Tico's atmosphere comes solely from the food hall, located in the heart of downtown Boulder. It's simple, laidback, and easy for the vendors to work in. They are only responsible for their food and space, which has made opening Gomez's eatery quicker than if he had done a standalone restaurant. Many vendors in Avanti, both the Denver and Boulder locations, have moved on to open freestanding restaurants.
