Flavor of the Week: Poke adds a creative twist to raw fish

Poke is a Hawaiian fish salad, in which pieces of raw sushi-grade fish are mixed with grains, chopped vegetables and sauces.

Poke is in the Adoption stage. It’s gaining traction on menus, but is still considered unique. It is most often found at independent casual dining and progressive fast-casual restaurants.

Tuna Poke Nachos are on the menu at Five Napkin Burger, which has five locations in New York and Boston. The dish features marinated tuna, seasoned potato chips, avocado and wasabi cream.
