Zoom Dinner Party and Cooking Demo
Spago in Los Angeles might be closed, but guests can enjoy the food and company chef and owner Wolfgang via the Zoom app on May 2 in one of a series of productions by Paul Vitaglano hosted by Billy Harris. For $175 per person, with a two person minimum, guests order their meals via Eventbrite and can either pick up their food and drinks between 2 p.m. and 4 p.m. at the restaurant or have it delivered for an additional $30.
Then, starting at 6:30 mixologist Charlotte Voisey will demonstrate how to mix the ingredients provided to make cocktails — an Old Fashioned and a Gimlet —while guests eat spicy tuna cones. Then Puck will do a cooking demonstration moderated by Harris.
Included in the meal is a bottle of 2016 Santa Margherita Chianti Classico Reserva, a bottle of San Pellegrino water, a kit to make spicy tuna cones out of big eye tuna tartare, masago, scallions and bonito, followed by roasted baby beets with arugula and citrus. Puck will demonstrate who to make the risotto with mushrooms, thyme and Parmigiano-Reggiano, and then guests will enjoy braised Prime beef short ribs in red wine reduction with caramelized spring onions, smoked bone marrow, celery root and pickled mustard seeds.
Dessert is a marjolaine — hazelnut meringue cake with praline buttercream and dark chocolate ganache.
