WHY IT'S COOL: Paganini launched his company in 2008 with the opening of Beretta. He now has 18 vibrant restaurants including Belga, which San Francisco Chronicle, and three more on the way later this year. They range from the sexy, evocative Beretta to top-notch fast-casual burger (Super Duper) and Mexican (Unos Dos Tacos) joints. Even a big city like San Francisco needs cool neighborhood restaurants, and Back of the House creates them as well as anybody.
