Applewood Bacon Breakfast Panini

36 Tyson® Applewood Smoked Flat-Pack® Bacon Slices

24 country white bread slices

24 Colby Jack cheese slices

24 eggs, small, scrambled, warm,

to taste, salt and black pepper

Cover bacon tightly and slack in cooler between 32°F and 36°F prior to use.

Place thawed bacon on sheet pan lined with baking paper. Heat in preheated conventional oven at 350°F for 30-40 minutes or until crisp and temperature reaches 145°F for 15 seconds. Remove from oven. Keep warm above 140°F.

To assemble single serving: Place 1 slice of bread on flat work surface. Top with 1 slice cheese, 4 oz. egg, 3 strips bacon and 1 slice cheese. Close sandwich with second slice of bread; brush outer surfaces tightly with butter.

Grill-press in preheated panini grill until cheese is melted and bread is golden brown. Slice in half diagonally.
