The Mexican treat has increased 49% on menus in the past four years

As the summer heats up, expect to see paletas popping across menus and social media. These icy, Mexican treats are typically found in two variations: water- or juice-based, and a milk- or cream-based version. Paletas offer myriad opportunities from the base flavor to the inclusions. They also offer interesting opportunities for visual and textural experiences as whole fruit pieces are typically suspended within each pop.
