Tantra Oyster Slider

Yield: 1 serving.

1 bottle inexpensive champagne
1 cup champagne vinegar
3 cups passion fruit juice
1 Tbsp. black pepper, crushed
1 Tbsp. kosher salt
3 Tbsp. sugar
1/2 cups shallots
1 oyster, shucked
1 tsp. Tabasco® brand Habanero
Pepper Sauce
2-3 edible flowers

For granita: Dissolve sugar in the fruit juice over medium heat. Revome from heat and add other ingredients. Place in a 2" stainless steel pan and freeze.

When frozen, scrape with a fork to produce ice granules.

For assembly: Place the oyster in a dish and top with the granita and edible flowers.
