Yield: 3 1/2 cups.
10 oz. cabbage, chopped
1 cup black beans, drained, rinsed
1cup corn kernels, thawed
1/4 red onion, diced
1 Tbsp. red bell peppers
1 Tbsp. green bell pepper, diced
1 Tbsp. jalapeño pepper, minced
1 1/2 tsp. cumin seed
1 California Avocado, diced
1/2 cup California Avocado Ranch Dressing (recipe follows)
CALIFORNIA RANCH AVOCADO DRESSING
2 California Avocados
3 1/2 cups Ranch Dressing, prepared
3/4 cup parsley, fresh chopped, packed
- For slaw: Mix together all ingredients except diced California Avocado and California Avocado Ranch Dressing.
- Dice avocado as needed. Add avocado and dressing to above. Stir to distribute and serve on line.
- For dressing: Dice 2 avocados. Pulse all ingredients in food processor until smooth, stopping to scrape down sides. Label, date and refrigerate.
