What does it take to get customers out of bed and into a restaurant for breakfast? A lot of factors are at play as the alarm goes off each morning. About two-thirds of people do eat breakfast, according to Datassential’s MenuTrends Keynote report, but most of them do so at home, with the majority sleepwalking into a bowl of cold cereal.

When people do eat their morning meal away from home, 48 percent grab a breakfast sandwich. The biggest factor luring people to venture out for breakfast is great taste (74 percent of those surveyed). That’s good news for morning warrior chefs who are up early, serving lesser-known global treasures, shareable plates, and yes, booze for breakfast in the form of eye-opening breakfast cocktail menus.
