This week's top 10: Restaurants find it hard to bring back employees, lawmakers debate improvements to PPP loans

Coronavirus forces a rethink of restaurant design, the Independent Restaurant Coalition gives a voice to smaller businesses and more trending stories for independent restaurants

This week, more and more states grappled with reopening in a post-COVID-19 world.

Lawmakers set about debating improvements to the Paycheck Protection Program which infamously came under fire for helping large restaurant chains rather than small, independent businesses as the program was intended. Several restaurants that have had issues rehiring employees spoke to Restaurant Hospitality this week about how it's different for each individual employee to figure out hours, pay and role in this new environment.

And for those that open, they have to rethink how their restaurants are laid out. Buffets and close tables are a thing of the past, bathrooms pose an issue and food halls may still make a resurgence. See what some design experts said about the future of restaurant design.
