Blais’s involvement in Yellowbelly began with a simple email from Wiggins, left, and Howard, middle. Blais, right, is a partner and will visit Yellowbelly regularly throughout the year to develop its menu and add new items on an ongoing basis. The day-to-day kitchen operations is led by executive chef Jason Gethin and sous chef Kate Wagoner, while co-owner Wiggins oversees the beverage program as bar manager.
