Vegetarian Melt

INGREDIENTS:1 lb., 9 oz. Idaho-E.Oregon red onions, sliced
1 lb., 9 oz. fresh mushrooms, sliced
1 lb., 9 oz. broccoli spears, frozen, thawed
1 lb., 9 oz. fresh tomatoes, sliced (50 slices)
1 lb., 9 oz. cucumbers, sliced lengthwise (75 slices)
25 hoagie rolls, 6-inch
3 cups mayonnaise and/or mustard
1 lb., 9 oz. mozzarella cheese slices (25 slices) DIRECTIONS:Combine onions, mushrooms, and broccoli in perforated steamer pan and steam 2 minutes or until barely tender. Spread bottom half of each roll with mayonnaise and/or mustard. Place 2 tomato slices and 3 cucumber slices on each roll in two 12 inch x20 inch x2 inch pans. Place 3 ounces steamed vegetables on cucumbers, and top with 1 slice cheese. Bake at 350°F for 3 to 5 minutes, or until cheese melts. Place top half of bun on cheese and serve warm.
