Papaya Passion Fruit Salsa

INGREDIENTS:½ pint water
1 lb. brown sugar
½ tsp. pound cinnamon
½ tsp. ground clove
½ tsp. vanilla extract
¼ lb. fresh ginger
1-½ qts papaya, peeled, seeded, cut into chunks
1 pint passion fruit pulpDIRECTIONS:1. Bring water to a boil. Add sugar, cinnamon, clove, vanilla and fresh ginger and simmer gently until ginger is tender.

2. Add papaya chunks, passion fruit pulp and simmer slowly 20 to 30 minutes. Remove from heat, cover and chill
