Protein-enriched Tapioca

INGREDIENTS:1/3 cup sugar
3 Tbsps. minute tapioca
1 2/3 cup whole milk
1 egg, well beaten *
6 Tbsps. (3 pouches)
Multimix powder
1 tsp. vanilla
*or ¼ cup egg substitute
DIRECTIONS:1. Mix together sugar, tapioca, milk and egg in a saucepan; let stand for 5 minutes.

2. Cook on medium heat, stirring constantly, until mixture comes to a boil. Remove from heat (pudding thickens as it cools).
