Artichoke and Corn Salsa

INGREDIENTS:6 freshly cooked Ocean Mist Farms artichoke hearts, diced
1 ear corn
½ cup diced roasted red bell pepper
1 small red onion, diced
½ cup diced peeled jicama
3 serrano chiles, seeded and minced
½ bunch fresh cilantro, finely chopped
3 limes, juiced
to taste, salt and pepper DIRECTIONS:Remove husk and silk from corn and cook in boiling
