Flavor of the Week: Tinga, a taco and tostada tradition

Tinga is a quintessential dish originating from the Mexican state Puebla, but is commonly found throughout Mexico as a popular protein in tacos and tostadas (pictured above).

Traditional tinga contains a shredded protein lightly stewed with a sauce of tomatoes, chile (commonly chipotle) peppers and onions. Tinga may be paired with a variety of proteins — familiar applications include chicken, pork and beef, but trendier applications include jackfruit as plant forward option.

The beauty and popularity of tinga lies in its opportunity for customization ranging from the peppers to aromatics.
