Flavor of the Week: Freekeh shows versatility across the menu

The Super Grain Salad served at Harvest Seasonal Grill & Wine Bar in Glen Mills, Penn., includes freekeh, quinoa, farro, Tuscan kale, Moroccan carrots, pomegranate seeds, toasted almonds, feta, toasted pumpernickel breadcrumbs, tangerine-mint yogurt and ginger carrot hummus vinaigrette.

Freekeh is a type of young wheat from North Africa and the Eastern Mediterranean that can be used in place of other grains to provide a chewy texture and slightly smoky flavor.

Freekeh is in the Inception stage. The grain is considered a premium ingredient that can be found on mostly fine-dining menus.
