Flavor of the Week: Elderflower lends delicate floral touch

Elderflower syrup is used as an ingredient in beverages as well as desserts such as cupcakes, curds and fritters.

Elderflower is in the Adoption stage. It’s gaining traction on menus but is still considered unique. The ingredient can be found at independent casual-dining and progressive fast-casual restaurants.

With all of the buzz surrounding Prince Harry and Meghan Markle’s nuptials last May, restaurant operators created their own riff on the official wedding cake — lemon and elderflower — to please fans of the royal event. Van Leeuwen, a Brooklyn, N.Y.-based ice cream company, served a limited-time ice cream flavor, Royal Wedding Cake, at its then eight shops in New York City and three shops in Los Angeles. The flavor was made with a sweet cream base, a swirl of elderflower buttercream frosting and pieces of lemon pound cake.
