Cabbage is a staple on St. Patrick’s Day, when many celebrate with Irish fare such as corned beef and cabbage.
Cabbage is in the Adoption stage. It’s found in the ethnic aisle at supermarkets, casual-dining independents and fast-casual concepts. Adoption-stage trends grow their base via lower price points and simpler prep methods. Still differentiated, items in this stage are often featured as premium and/or authentic ingredients. The authenticity card is often played with cabbage, which is made into the fermented Korean side dish kimchi and the fermented German side dish sauerkraut.
