Fat Sal’s Deli, 3 Los Angeles units
For Halloween this year, overstuffed sandwich maker Fat Sal’s transformed into Big Kahuna Burger, a place from the 1994 movie “Pulp Fiction.” Visitors channeled their inner Samuel L. Jackson and ordered from the menu which included Big Kahuna Burgers, shakes and this scene-stealing Hawaiian plate of sweet potato fries, spam and a fried egg.
Akash Kapoor, founder & CEO, Curry Up Now, Bay Area, Atlanta, Salt Lake City
Sweet potatoes are found in Indian cuisine, but not usually like this. Crisp, waffle-cut sweet potato fries are the base for this Indian-style poutine, smothered in chicken (or paneer) tikka masala, shredded mozzarella and a dash of microgreens. As mentioned in the Curry Up Now mission statement, “Never a daal moment.”
Fernando Valladares, chef, Ground House at Trade Food Hall, Irvine, Calif.
Ground House is a sunny, hip burger spot inside the Trade Food Hall, featuring signature burgers like al pastor and magical milkshakes in Technicolor hues with gummies on top. Fry Roulette is a shareable (or not, we won’t judge) wheel of French fries, sweet potato fries, tater tots, waffle fries and onion rings. Diners can then gamble deliciously with the dipping options: pineapple-habanero, banana ketchup, Tabasco cream, horseradish-BBQ and more.
Sweet potato poutine
Ruth Tal, Fresh, Los Angeles, Toronto
Fresh got its start in 1999 in Toronto and for the past 20 years has been turning out raw, organic eats meant to provide energy … about 20 years ahead of the game. Now, in addition to five Canadian locations, the first U.S. Fresh location, Fresh LA, has opened on Sunset Boulevard. This sweet potato poutine, made with vegan cheese sauce and mushroom gravy, is available as a hearty sidekick to menu items like squash tacos, supergreen Caesar salad, dragon broccoli and nachos with cashew queso.
