New on the Menu: Wafflesaurus Rex, beer ceviche

Döner Burger

Panorama Middle Eastern Grill is a New York City concept from culinary director Julien Iaconelli, a By Chloe veteran, that officially opened to the public on August 1. One of the restaurant’s signature dishes is the Döner Burger — a house-made pita filled with grass-fed beef, lamb, mixed greens, 72-hour hummus, pickled turnips, red cabbage and Panorama sauce. The sauce is made with onions, red and green peppers, flour, carrots, tomatoes and Mediterranean spice mix. The 72-hour hummus got its name because that’s how long it takes to make. The team soaks chickpeas for at least 12 hours in cold water and baking soda and then cooks them until the skins are cracked and visible. Then they cool them down for about four hours, grind them into hummus and add seasoning, according to Iaconelli.

The Maui Wowi
Dat Dog

Dat Dog, a four-unit chain based in New Orleans, will offer this tropical-inspired hot dog for a limited time. The Maui Wowi is made with a smoked sausage that contains pineapple. The sausage is grilled, placed in a sourdough bun and topped with peach mango salsa and chipotle mayonnaise.

Beer Ceviche
Puesto

The Park Place location of Puesto in Irvine, Calif., will soon bring beer ceviche to its official menu permanently. The combo of seafood and booze, previously a secret menu item, is created by first hollowing out a poblano chile and filling it with the restaurant’s Ceviche Acapulco — a mix of Baja striped bass, cucumber, tomato, serrano chile, pickled onion, Mexican oregano, avocado and cilantro oil. The bottom of the pepper is sliced off so it can stand up on a can of Modelo beer. Then it’s all sprinkled with Tajín. The juices of the ceviche seep into the beer, which is enjoyed through a straw.

Chicken Liver Éclair
Fauntleroy

This savory take on the classic French pastry is available at Fauntleroy in Milwaukee, Wis. The restaurant, a recently-opened eatery, prepares the hors d'oeuvre by filling a traditional éclair with a mousse made with chicken liver, butter, shallots, garlic, cream, brandy, sherry vinegar and salt. The pastry is also topped with the mousse along with pickled shallots and chervil.

The Wafflesaurus Rex
Sweetosaur

Sweetosaur, a dinosaur-themed dessert shop in Riverside, Calif., has introduced a new T-Rex-shaped waffle treat. The Japanese taiyaki-inspired menu item comes in three varieties: Original — a T-Rex Waffle with vanilla soft-serve and sprinkles; Chocolate — a Chocolate Chunk T-Rex Waffle with milk chocolate ice cream, brownie bites, milk chocolate eggs and a drizzle of fudge; and Churro — a Churro T-Rex Waffle with dulce de leche ice cream, a chocolate wafer stick and a drizzle of caramel.
