In collaboration with Yuji Ramen, a sustainable ramen spot located at Okonomi, a Brooklyn, N.Y., restaurant, Seamore’s is serving a special eco-friendly ramen bowl this month. The limited-time dish features the European green crab, an invasive species. Since the European green crab has no natural predators, they flourish in the Cape Cod Bay, leading to negative effects on the environment. According to Seamore’s, killing these creatures will benefit the ecosystem. To create the ramen, the sustainable seafood joint simmers green crab stock with leeks and ginger for eight to 12 hours. The broth is combined with Hatcho miso — a miso paste made with soybeans and koji rice, or malted rice — chile paste, soy, garlic, shallot, yuzu juice, and sesame oil and seeds. The menu item is served with ramen noodles, roasted monkfish, smoked chile oil, kombu, roasted squash, ginger and leeks. Seamore’s has six locations in New York City, but this special ramen is only available at the Nolita, or north of Little Italy, location in Manhattan.
