Minigrow, sister to fast-casual concept Honeygrow from entrepreneur Justin Rosenberg, a 2018 Nation’s Restaurant News Power List pick, introduced what it calls “alt-noodle” options at its New York City units on July 23. These locations now feature bowls with vegetable-based noodles: zucchini noodles, spiralized raw beets and cucumber ribbons. The Beet Noodles + Tofu bowl features the beet strips with citrus-herb dressing, marinated tofu, roasted chickpeas, pickled carrots, scallions and the chain’s signature spice blend.
