Mauro Colagreco opened his first U.S. concept, Florie’s, in Florida in partnership with Four Seasons Resort Palm Beach on Jan. 15. Mirazur, the Argentine-Italian chef’s flagship restaurant in Menton, France, recently received its third Michelin star and is currently ranked third on San Pellegrino’s World’s 50 Best Restaurants list. At Florie’s, the menus are “inspired by Colagreco’s Mediterranean spirit, multicultural background and international vision.” One of the small plates available at the new spot is a hamachi dish that incorporates chia seeds and macadamia milk. The nut milk is spread on the bottom of the plate, and then the dish is topped with the cut fish, chia seeds, red onions, edible flowers, citrus sorrel and grapefruit gel.
