Bodega Negra, a New York City restaurant from multiconcept operator Tao Group, introduced The Habanero Hot Box — two chorizo tacos packing serious heat — on May 1. Executive chef Brad Warner includes four types of chiles — habanero, jalapeño, árbol and chipotle — as well as five types of cheese — Oaxaca, Chihuahua, Cotija, goat cheese, queso fresco — inside the tacos. They’re topped with salsa and habanero crema, and then smoked with applewood tableside.
