Bodega Negra, a New York City restaurant from multiconcept operator Tao Group, introduced The Habanero Hot Box — two chorizo tacos packing serious heat — on May 1. Executive chef Brad Warner includes four types of chiles — habanero, jalapeño, árbol and chipotle — as well as five types of cheese — Oaxaca, Chihuahua, Cotija, goat cheese, queso fresco — inside the tacos. They’re topped with salsa and habanero crema, and then smoked with applewood tableside.

King Crab Feast
Chef Max Ng’s latest addition to the group dining options at Momofuku Ssäm Bar in New York City is a large-format dinner featuring a giant king crab, weighing approximately seven pounds, served three different ways for each course.
King Crab Feast: First course
The meal starts with whole king crab legs poached in shio kombu butter. The legs are then grilled, split and served in a crab-shaped silver platter with Bibb lettuce and shiso to wrap the crab in, along with lime and lemon wedges and condiments including yuzu kosho olive oil, horseradish rémoulade, brown butter fish sauce, Singapore-style chile sauce and Chinese white prune salt.
King Crab Feast: Second course
For the second course, Ng steams and batter-fries the king crab body. It’s coated with a salted duck yolk sauce and topped with Fresno chiles and lightly fried curry leaves.
King Crab Feast: Third course
The third course from Ng is a re-creation of his grandmother’s recipe for Kuala Lumpur-style Hokkien noodles cooked in a soy sauce-based sauce. The dish, which weighs approximately six pounds, includes king crab knuckles and claws, wheat noodles, Napa cabbage, enoki mushrooms and Chinese broccoli. The dinner can be reserved via Resy, with one King Crab Feast available Monday through Wednesday for a group of four to six people.
