Steak frites with curry butter and onion marmalade
At Amalia, a Mediterranean inspired, Latin accented restaurant that recently opened at the Lennox Hotel in Miami Beach, Fla., chef Hernan Griccini tops beef tenderloin filet with curry butter and onion marmalade — a combination that seems South Asian, but the Argentina-born chef said it was inspired by his time on the Spanish island of Mallorca, where he was invited to prepare a dish at an event and combined leftover ingredients on the fly to add some zing to traditional steak frites.
The curry butter is a blend of butter, curry powder, Dijon mustard, capers, parsley, lemon juice, orange juice and paprika, all kneaded together, and the onion marmalade is made by slowly cooking red onions with a bay leaf and then adding red wine and Port, reducing it by half, adding a little honey and further reducing it to marmalade consistency.
It’s served with house-made potato chips.
