Highlands Detroit is a prix-fixe-only restaurant by chef and restaurateur Shawn McClain that is celebrating the summer with this dish, one of the options for the second course, which is made by toasting the restaurant’s sourdough bread with shaved garlic and thyme and then blending it until smooth with local strawberries, heirloom tomatoes, cucumbers, peppers, garlic, chiles, mint and tarragon. It’s finished with sherry vinegar, arbequina olive oil and honey infused with fermented garlic.
That’s all poured over pickled green strawberries and a minced salad of the major ingredients in gazpacho, including fennel, cucumbers, strawberries, and tomatoes.
