This seafood-friendly dish has saturated the fast-casual segment, but Ocean Prime is giving it a fine-dining makeover. The 14-unit restaurant, based in Columbus, Ohio, first introduced poke at its New York City unit. The menu item found a great deal of success with customers there because it’s a crowd-pleaser, according to Ocean Prime Executive Corporate Chef Brian Hinshaw, who named poke as “one of those dishes that satisfies on all angles” in an interview.
The chain will now roll a poke bowl out to seven more locations by mid-May for the Chef Specialties menu during the lunch daypart. What makes the dish upscale? Hinshaw credits its premium ingredients: ahi tuna, cured salmon, avocado, masago roe, sesame dressing and Sriracha vinaigrette and the sake marinade used to marinate all of the fish.
