Confit chicken wings
Although at the epicenter of the novel coronavirus pandemic, a restaurant named Public Display of Affection has opened in Brooklyn, N.Y. It’s run by brother-and-sister team Robert and Emi Guimond. He worked at Jean Georges and Roberta’s, she worked at Craft, and they both worked at Speedy Romeo. PDA’s wood-burning oven churns out pizzas and a wide variety of roasted vegetables, and is used to finish these wings, which are confit with a five-spice blend plus chipotle and ancho chiles and served with a side of Alabama white barbecue sauce and chile jam.
It’s all currently only available for takeout and delivery, but a 20-seat socially distanced patio awaits once the city’s next phase of reopening is implemented.
Price: $13 for six wings.
