Grilled octopus is definitely having a moment, but this version brings together the flavors of Spain and Syria. The octopus is braised, then grilled over California white oak and served with a muhammara sauce made with roasted red peppers and walnuts. The dish is finished with red wine-pickled shallots, which cut the richness of the sauce, and a sprinkle of spring herbs, such as dill, cilantro, opal basil and mint.
